Description

Why the name Synthesi? This is an introduction to understanding Aglianico, the exquisite volcanic terroir and how that translates in the cellar and in your glass. Taste the innate qualities of this little known noble Italian variety, starting from the primary notes of intense black fruits, pepper and a walk through a forest. Aglianico, often harvested well into November, is a grape that is extremely high in acidity with grippy tannin. We love how the Paternoster tradition uses wood-aging artfully to tame the proud Aglianico into a wine of extraordinary harmony and balance. If you don’t know the cellar-worthy Aglianico del Vulture, Synthesi is the place to start.

Tasting Note

A vibrant ruby red in color, it displays an ethereal, fragrantly fruity bouquet of blackberries, blueberries, wild berries and pepper. On the palate it is dry and velvety, with well-integrated tannins; it reveals great balance and a persistent aftertaste.


Serving Suggestions

Excellent with all game and red meat dishes, as well as with mature cheeses.

The area of Mount Vulture Vineyards at 450-600 meters above sea level.

Vinification and Maturation

Classic red wine vinification with destemmed grapes; maceration on the skins in stainless steel for 12-15 days at 25°-28°C, with periodic pumping over and punching down of the cap. Maturation for 12 months in large Slavonian oak casks for 80% of the wine and in (not new) French barriques for the remaining 20% for 14 months. 7-8 months’ bottle-aging.

Ageing

Paternoster wines age in the traditional Slavonian and French oak casks to reach important aromatic notes, colour nuances and complexity. In this context, dated 1925, we can find the origins and the great history of Vulture oenology.

Vineyard

Tommasi family enters with a majority stake in the Paternoster wine company, historical producer of Aglianico del Vulture, in Basilicata region to strengthen the brand and the consolidation of the commercial network, as well as to increase interventions in the vineyards and cellar with a focus on organic and eco-sustainability. It covers about 20 hectares with black soil of volcanic origin, with a modern cellar, located in the different wine-growing districts in the countryside of the small town Barile. The vineyards are overlooking the Mount Vulture, an extinct volcano that marks the borders of a generous yet misterious land.
